  • 1 lb shrimp, peeled and deveined

  • 2 cloves garlic, minced
  • 1 carrot, finely chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the Seafood: Cook lobster tails in boiling water for about 5-7 minutes or until shells turn bright red. Let cool, then remove meat and chop. Set aside. Peel and devein the shrimp. Set aside.

  2. Make the Base: In a large pot, heat olive oil over medium heat. Add onions, garlic, and carrots. Sauté until vegetables are tender, about 5 minutes. Stir in tomato paste and paprika. Cook for an additional 2 minutes.

  3. Prepare the Roux: In a separate small saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute to form a roux.

  4. Combine Ingredients: Pour white wine into the pot with the sautéed vegetables. Allow it to simmer for 3 minutes. Add seafood stock to the pot, and bring to a gentle simmer. Stir in the roux to thicken the bisque.

  5. Cook the Seafood: Add chopped lobster and shrimp into the pot. Simmer for about 5 minutes or until shrimp are fully cooked. Stir in heavy cream and heat through. Season with salt and pepper to taste.

  6. Serve: Ladle the bisque into bowls and garnish with fresh parsley.

Notes

  • For a richer flavor, you can add a splash of brandy or cognac along with the white wine.
  • If you prefer a smoother texture, use an immersion blender to puree the bisque before adding the seafood.
  • Make sure not to overcook the shrimp to avoid a rubbery texture.
  • Letting the bisque rest off the heat for a few minutes before serving can help the flavors meld beautifully.
