- 2 lbs Yukon Gold Potatoes
- 1 cup plain Greek yogurt
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh chives, chopped
- 2 tbsp fresh dill, chopped
- 3 garlic cloves, minced
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Boil the Potatoes: Peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot with cold salted water. Bring to boil over medium-high heat and simmer until fork-tender (15-20 minutes).
- Drain and Steam Dry: Drain the potatoes in a colander. Return them to the pot over low heat for 1 minute to evaporate excess moisture.
- Mash: Use a potato masher to mash the potatoes until smooth but not gluey.
- Add Flavor: Stir in Greek yogurt, butter, minced garlic, chopped herbs, salt, and pepper until well combined.
- Taste Test: Adjust seasoning as necessary.
- Serve: Transfer to a serving bowl and garnish with additional herbs or olive oil if desired.
