Description

A creamy and flavorful mashed potato dish that’s perfect as a side for any meal.


Ingredients

  • 2 lbs Yukon Gold Potatoes
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tbsp fresh dill, chopped
  • 3 garlic cloves, minced
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Boil the Potatoes: Peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot with cold salted water. Bring to boil over medium-high heat and simmer until fork-tender (15-20 minutes).
  2. Drain and Steam Dry: Drain the potatoes in a colander. Return them to the pot over low heat for 1 minute to evaporate excess moisture.
  3. Mash: Use a potato masher to mash the potatoes until smooth but not gluey.
  4. Add Flavor: Stir in Greek yogurt, butter, minced garlic, chopped herbs, salt, and pepper until well combined.
  5. Taste Test: Adjust seasoning as necessary.
  6. Serve: Transfer to a serving bowl and garnish with additional herbs or olive oil if desired.
