- 1 cup fresh mixed berries (e.g., blueberries, raspberries)
- 2 tablespoons apricot jam (optional, for glaze)
- Powdered sugar, for dusting
Instructions
- Prepare the Tart Crust:
- In a bowl, mix flour, powdered sugar, and salt.
- Add cold butter cubes and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs.
- Gradually add ice water, mixing until the dough holds together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Make the Custard Filling:
- In a saucepan, heat milk over medium heat until steaming.
- In a separate bowl, whisk together sugar, egg yolks, and cornstarch until smooth.
- Gradually whisk hot milk into the egg mixture, then return the mixture to the saucepan.
- Cook on medium heat, stirring constantly, until it thickens to a pudding-like consistency.
- Remove from heat, stir in vanilla extract and butter. Let it cool slightly.
- Bake the Tart Crust:
- Preheat oven to 350°F (175°C).
- Roll out the chilled tart dough on a floured surface and fit it into a tart pan.
- Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans.
- Bake for 15 minutes, remove weights, and bake for another 10 minutes or until golden. Cool completely.
- Assemble the Tart:
- Pour the cooled custard filling into the baked tart shell, spreading it evenly.
- Arrange fresh berries on top. If using glaze, warm apricot jam and brush it over the berries for a shiny finish.
- Chill and Serve:
- Refrigerate the tart for at least 1 hour before serving.
- Dust with powdered sugar just before serving.
