Instructions

  1. Prepare the Tart Crust: In a bowl, mix flour, powdered sugar, and salt. Add cold butter cubes and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough holds together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Make the Custard Filling: In a saucepan, heat milk over medium heat until steaming. In a separate bowl, whisk together sugar, egg yolks, and cornstarch until smooth. Gradually whisk hot milk into the egg mixture, then return the mixture to the saucepan. Cook on medium heat, stirring constantly, until it thickens to a pudding-like consistency. Remove from heat, stir in vanilla extract and butter. Let it cool slightly.
  3. Bake the Tart Crust: Preheat oven to 350°F (175°C). Roll out the chilled tart dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans. Bake for 15 minutes, remove weights, and bake for another 10 minutes or until golden. Cool completely.
  4. Assemble the Tart: Pour the cooled custard filling into the baked tart shell, spreading it evenly. Arrange fresh berries on top. If using glaze, warm apricot jam and brush it over the berries for a shiny finish.
  5. Chill and Serve: Refrigerate the tart for at least 1 hour before serving. Dust with powdered sugar just before serving.
