Description

A delightful cheesecake combining cranberries and orange zest for a deliciously tangy dessert.

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries
  • ½ cup sour cream
  • 2 tablespoons orange juice
  • ¼ cup granulated sugar (for cranberry topping)
  • 1 cup fresh cranberries (for topping)
  • Orange slices (for garnish)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 325°F (160°C).
    • In a bowl, mix graham cracker crumbs and melted butter until combined.
    • Press the mixture into the bottom of a 9-inch springform pan.
  2. Prepare the Filling:
    • In a large bowl, beat softened cream cheese and 1 cup of sugar until smooth.
    • Add eggs one at a time, mixing well after each addition.
    • Stir in vanilla extract, orange zest, and orange juice until well combined.
    • Fold in 1 cup of cranberries gently.
  3. Bake the Cheesecake:
    • Pour the filling over the crust in the springform pan.
    • Bake for 50-60 minutes, or until the center is set and the cheesecake has a slight jiggle.
    • Remove from the oven and let cool for 10 minutes.
  4. Prepare the Cranberry Topping:
    • In a small saucepan, combine ¼ cup sugar and 1 cup fresh cranberries.
    • Cook over medium heat until cranberries start to soften and burst, about 5-7 minutes. Let it cool.
  5. Assemble the Cheesecake:
    • Spread the cranberry topping over the cooled cheesecake.
    • Garnish with orange slices and a dusting of powdered sugar.

Notes

  • For a smoother texture, ensure all ingredients are at room temperature before mixing.
  • Use a water bath while baking to prevent cracks in the cheesecake.
  • Refrigerate the cheesecake for at least 4 hours or overnight for best results.
  • Adjust the sugar in the cranberry topping to taste, depending on how tart the cranberries are.
