Description
Delicious Cajun shrimp and sausage served over rice.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 lb Andouille sausage, sliced
- 1 cup bell peppers (red, yellow, green), chopped
- 1 medium onion, finely chopped
- 1 cup celery, chopped
- 14 oz diced tomatoes (with juice)
- 4 cups chicken broth
- 2 tbsp Cajun seasoning (adjust to taste)
- 1 cup okra (optional)
- 2 cups cooked white or brown rice
Instructions
- In a large pot over medium heat, sauté sliced sausage until browned.
- Add chopped onions, bell peppers, and celery; cook until softened.
- Stir in diced tomatoes and chicken broth; mix well.
- Sprinkle in Cajun seasoning; adjust to taste.
- Add shrimp and okra (if using) when the mixture begins to bubble; cook until shrimp are pink and opaque (about 5 minutes).
- Serve hot over cooked rice and garnish with fresh parsley.
Notes
- Consider adding additional spices for more kick.
- Serve with a side salad for a complete meal.
