Description

A delightful and vibrant cheesecake, perfect for any occasion!

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup melted butter
  • 3 (8 oz) packages of cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup heavy cream
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Food coloring (pink and blue)

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C).
  2. Mix Ingredients: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until well combined.
  3. Form Crust: Press the mixture into the bottom of a 9-inch springform pan. Ensure it’s even and firm.
  4. Bake Crust: Bake for 10 minutes. Remove from oven and allow to cool.
  5. Beat Cream Cheese: In a large bowl, beat the cream cheese with an electric mixer until smooth.
  6. Add Sugar and Vanilla: Gradually add sugar and vanilla extract, mixing well.
  7. Incorporate Eggs: Add eggs, one at a time, beating well after each addition.
  8. Mix in Heavy Cream: Stir in the heavy cream until combined.
  9. Pour into Crust: Pour the filling over the cooled crust.
  10. Bake Cheesecake: Bake at 325°F (160°C) for 50-60 minutes, or until the center is set and the edges are lightly golden.
  11. Cool and Refrigerate: Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  12. Whip Cream: In a chilled bowl, whip the heavy cream until soft peaks form.
  13. Add Sugar and Vanilla: Gradually add powdered sugar and vanilla extract, continue to whip until stiff peaks form.
  14. Color Topping: Divide the whipped cream into three bowls. Add a few drops of pink food coloring to one, blue to another, and leave the third plain.
  15. Layer Whipped Cream: Gently layer and swirl the colored whipped cream over the chilled cheesecake.

Notes

  • Room Temperature Ingredients: Ensure your cream cheese is fully softened to avoid a lumpy cheesecake batter.
  • Avoid Overbaking: The center should have a slight jiggle when removing from the oven; it will set as it cools.
  • Smooth Topping: Use a spatula to gently blend the colors of the whipped topping for a marbled effect.
  • Chill Thoroughly: A well-chilled cheesecake is easier to slice and serves beautifully.
