Instructions

- Mix Ingredients: Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until well combined.
- Form Crust: Press the mixture into the bottom of a 9-inch springform pan. Ensure it’s even and firm.
- Bake Crust: Bake for 10 minutes. Remove from oven and allow to cool.
- Beat Cream Cheese: In a large bowl, beat the cream cheese with an electric mixer until smooth.
- Add Sugar and Vanilla: Gradually add sugar and vanilla extract, mixing well.
- Incorporate Eggs: Add eggs, one at a time, beating well after each addition.
- Mix in Heavy Cream: Stir in the heavy cream until combined.
- Pour into Crust: Pour the filling over the cooled crust.
- Bake Cheesecake: Bake at 325°F (160°C) for 50-60 minutes, or until the center is set and the edges are lightly golden.
- Cool and Refrigerate: Cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Whip Cream: In a chilled bowl, whip the heavy cream until soft peaks form.
- Add Sugar and Vanilla: Gradually add powdered sugar and vanilla extract, continue to whip until stiff peaks form.
- Color Topping: Divide the whipped cream into three bowls. Add a few drops of pink food coloring to one, blue to another, and leave the third plain.
- Layer Whipped Cream: Gently layer and swirl the colored whipped cream over the chilled cheesecake.
