Instructions
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy using a hand or stand mixer.
- Add Wet Ingredients: Mix in the egg and vanilla extract until well combined.
- Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add these dry ingredients to the butter mixture. Mix until a smooth dough forms.
- Divide Dough: Divide the dough in half. To one half, add the cocoa powder and milk, mixing until uniformly combined.
- Roll Out Dough: Roll out both the vanilla and chocolate doughs separately between parchment sheets to about 1/4 inch thickness.
- Stack and Shape Dough: Carefully place the chocolate dough on top of the vanilla dough. Use the parchment to help roll the dough into a tight log, starting from one of the long edges. Wrap the log tightly in plastic wrap and refrigerate for at least 2 hours until firm.
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice and Bake: Slice the chilled dough log into 1/4-inch thick slices and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake the cookies for 10-12 minutes, or until the edges start to firm up. They will firm up as they cool on the baking sheet.
- Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- Ensure both doughs are the same consistency for even rolling and stacking.
- Chill the dough after shaping to maintain the defined pinwheel shape while baking.
- You can sprinkle powdered sugar on top for extra sweetness and decoration after baking.
