Cooking Tips and Notes for Chocolate Chip Cookie Granola

Creating the perfect chocolate chip cookie granola can be a delightful experience, filled with sweet aromas and warm memories. Here’s how to elevate your granola game and make it truly exceptional.

Choosing the Right Oats

Using old-fashioned rolled oats gives your granola the perfect chewiness. Instant oats can turn mushy, so stick with the whole grain variety. They’ll toast beautifully in the oven, creating that irresistible crunch we all love.

Sweetener Balance

While honey or maple syrup adds delightful sweetness, adjusting the amount can really customize the flavor. If you prefer a less sweet taste, feel free to reduce the syrup by a tablespoon or two. Just be cautious—not enough liquid can lead to a dry mixture.

Chocolate Selection

For the best results in your chocolate chip cookie granola, opt for high-quality dark or semi-sweet chocolate chips. They melt perfectly but also provide a rich flavor contrast to the oats and nuts. Plus, they add that lovely gooey texture when combined while warm!

Storage Tips

Once your granola cools completely, store it in an airtight container. This helps maintain its crispness. If you’d like to keep it fresher longer, consider storing it in the refrigerator.

Personalize It

Feel free to mix in your favorite nuts, seeds, or dried fruits for added nutrition and flavor. When I experiment, my go-to additions are pecans and dried cranberries—the combinations are endless, making it a fun and creative process!

  • Author: Recipe Creator
  • Total Time: 40 minutes
  • Yield: 10 servings 1x
  • Diet: Gluten-Free

Description

This homemade granola is made with gluten-free oats and a delightful blend of flavors, perfect for breakfast or a snack.

Ingredients

Scale
  • 4 cups gluten free old-fashioned oats (divided)
  • 2 tablespoons chia seeds
  • scant 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup coconut oil
  • 1/2 cup brown sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon vanilla extract
  • 2/31 cup semi-sweet or dark chocolate chips
  • to taste vanilla Greek yogurt, ice cream, or milk

Instructions

  1. Preheat the oven to 300 degrees then line a half sheet pan with parchment paper and set it aside.
  2. Add 1 cup oats to the bowl of a food processor then process into flour. Add the flour to a large mixing bowl with the remaining 3 cups old fashioned oats, chia seeds, cinnamon, and salt then stir with a fork to combine and set aside.
  3. To a small mixing bowl add the coconut oil then microwave for 30-40 seconds to melt. Add the brown sugar, maple syrup, and vanilla extract then stir to combine (the oil and brown sugar will stay separated – that’s ok).
  4. Pour the oil and brown sugar mixture over the oat mixture then stir very well with a spatula until all the oats are evenly coated. Scoop the mixture onto the prepared half sheet pan then spread into an even layer and press down firmly with the back of a spatula or the bottom of a measuring cup.
  5. Bake for 25-30 minutes or until the oats are light golden brown (avoid over-browning or the oats can taste burnt), rotating the pan halfway through but NOT stirring, which will encourage lots of granola clusters.
  6. Let the granola cool for a few minutes then sprinkle on the chocolate chips to melt slightly – start with 2/3 cup then add up to an additional 1/3 cup if desired after cooling. Continue to cool the granola completely before breaking it up into clusters with a large spatula.
  7. Store the granola in an airtight container on the counter for up to 5 days, or freeze for up to 3 months.
