- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup whole milk
- ¼ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper

- Roast and prepare the peppers: If you’re starting with fresh poblanos, roast them over an open flame or under the broiler until the skins blister and char. Place them in a covered bowl or sealed bag for 10 minutes to steam. This makes peeling easy. Gently remove the skins, slit each pepper, and remove the seeds. Flatten them carefully.
- Layer the casserole: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish. Lay half of the roasted peppers evenly across the bottom. Sprinkle half of the Monterey Jack and cheddar cheeses over the peppers. Repeat with the remaining peppers and cheese, creating rich, cheesy layers.
- Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper until smooth. This mixture will puff slightly as it bakes, giving the casserole structure similar to the fluffy coating of traditional chile rellenos.
- Pour and bake: Carefully pour the egg mixture evenly over the layered peppers and cheese. Make sure it seeps into the corners. Bake for 35–40 minutes, or until the center is set and the top is lightly golden. The casserole should feel firm but still tender when gently pressed.
