  • 1 large French baguette
  • 1 lb (450g) shrimp, peeled and deveined
  • 1 ½ cups shredded mozzarella cheese
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup cream cheese, softened
  • ¼ cup mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon lemon zest
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Bread: Preheat oven to 350°F (175°C). Cut the baguette in half lengthwise and hollow out the inside to create space for the filling.
  2. Cook the Shrimp: In a skillet, heat olive oil over medium heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove from heat and chop into smaller pieces.
  3. Make the Filling: In the same skillet, melt butter and add minced garlic. Sauté until fragrant. In a bowl, combine cream cheese, mayonnaise, salt, pepper, lemon zest, and sautéed garlic. Mix well. Stir in cooked shrimp, mozzarella cheese, and half of the parsley.
  4. Assemble the Bread: Spread the shrimp mixture evenly into the hollowed-out bread halves. Place the stuffed bread on a baking sheet.
  5. Bake: Bake in preheated oven for 15-20 minutes or until the cheese is melted and bubbly. Remove from oven and let cool slightly before slicing.
  6. Garnish and Serve: Sprinkle the remaining parsley over the top for garnish. Slice and serve warm.

Notes

  • For extra flavor, add a sprinkle of Parmesan cheese on top before baking.
  • If you prefer a spicy kick, add a pinch of red pepper flakes to the shrimp mixture.
