Description

Ingredients

  • 1 cup shredded cheddar cheese or cheese slices
  • 8 large flour tortillas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil for frying
  • Optional: sour cream, salsa, or guacamole for serving

Instructions

  1. Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened. Add the ground beef, breaking it apart with a spatula. Cook until browned. Season with cumin, chili powder, salt, and pepper. Stir well. Drain any excess fat from the skillet and set aside.
  2. Assemble the Taquitos: Lay each tortilla flat, and place a portion of the cooked beef mixture in the center. Sprinkle shredded cheddar cheese over the beef, or place cheese slices on top. Roll the tortilla tightly around the filling, creating a taquito shape.
  3. Cook the Taquitos: In the same skillet, add the remaining olive oil over medium heat. Place wrapped taquitos seam-side down in the skillet. Cook until golden brown and crispy on all sides, about 2-3 minutes per side.
  4. Serve: Remove taquitos from the skillet and let them cool slightly. Serve with sour cream, salsa, or guacamole on the side if desired.

  • For extra flavor, add chopped jalapeños or bell peppers to the beef mixture.
  • If you prefer a spicier kick, consider using spicy cheddar or pepper jack cheese.
