- 1 lb (450g) ground beef
- 1 cup shredded cheddar cheese or cheese slices
- 8 large flour tortillas
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 2 tablespoons olive oil for frying
- Optional: sour cream, salsa, or guacamole for serving
Instructions
- Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened. Add the ground beef, breaking it apart with a spatula. Cook until browned. Season with cumin, chili powder, salt, and pepper. Stir well. Drain any excess fat from the skillet and set aside.
- Assemble the Taquitos: Lay each tortilla flat, and place a portion of the cooked beef mixture in the center. Sprinkle shredded cheddar cheese over the beef, or place cheese slices on top. Roll the tortilla tightly around the filling, creating a taquito shape.
- Cook the Taquitos: In the same skillet, add the remaining olive oil over medium heat. Place wrapped taquitos seam-side down in the skillet. Cook until golden brown and crispy on all sides, about 2-3 minutes per side.
- Serve: Remove taquitos from the skillet and let them cool slightly. Serve with sour cream, salsa, or guacamole on the side if desired.
Notes
- For extra flavor, add chopped jalapeños or bell peppers to the beef mixture.
- If you prefer a spicier kick, consider using spicy cheddar or pepper jack cheese.
- To make these taquitos in advance, assemble them and place them in the refrigerator. Fry them just before serving.
- For a lighter version, consider using ground turkey or chicken instead of beef.
