- 1/2 cup unsalted butter, melted
- 1 tablespoon cooking oil (olive oil or coconut oil)
- 1 1/8 cup superfine sugar (caster sugar or white granulated sugar)
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 175° C | 350° F.
- Grease your 8-inch square baking pan using a cooking oil spray, and then line it with parchment paper.
- In a medium-sized bowl, whisk together the melted butter, sugar, and oil for about a minute.
- Add the vanilla and eggs, and beat together for another minute until the mixture is lighter in color.
- Sift in the flour, cocoa powder, and salt, then gently fold them into the mixture until well combined. Avoid over-beating to maintain the fudgy texture.
- Pour the batter into the greased baking pan and smooth the top. Optionally, top with chocolate chips or chunks.
- Bake in the preheated oven for 20 to 25 minutes. The brownies are done when the center doesn’t jiggle, as they will continue to bake in the hot pan.
- Let the brownies cool in the pan for a few minutes before slicing.
Notes
- For extra texture, consider adding nuts or chocolate chips on top before baking.
- Store in an airtight container at room temperature for up to 4 days.
